In September, I will be attending Olympia for the 2nd year. I am not only excited but anxious to see what this year will be like.
The other day I went onto a countdown tracker and realized how it will be less than 90 days that I will be stepping through the doors of the Las Vegas Convention Center!
So, I have less than 90 days to get my body in the best shape that I can get it. Since I work 8 hour shifts, 30 minute lunch.. I am stuck at work all day long! This is where preparation comes in.
Only if you prepare all your meals for the week, you understand what I mean. On Sundays and Mondays I prepare majority of my meals for the whole week. There are two reasons why I do this, so I don’t have to think every day about what I am having for breakfast, lunch or dinner (it’s prepared, it’s there) and I stick to my diet.
I was on YouTube and stumbled upon this video where they made egg white muffins, and the French Toast ones caught my attention!
French Toast Egg White Muffins
8-12 Egg Whites (I used 12)
Ezekiel Bread (I used 3 slices)
1 tsp of Vanilla Extract
1 tbsp of Cinnamon
1/3 cup of Stevia or Splenda (whatever you have in your kitchen, just no sugar!)
*Optional - I sprinkled my muffins with Nature’s Path Organic Pumpkin Flax Granola for a little crunch
Preheat oven to 400 degrees.
Crack the eggs and put all the egg whites into a bowl. Whisk the egg whites together. Add the vanilla extract, cinnamon and stevia to the egg whites, whisk together. Cut the Ezekiel bread into tiny squares. In a dozen muffin pan, spray with non-stick spray, and put Ezekiel bread squares into the muffin pan. Pour the egg mix on top of the Ezekiel bread. Put granola on top if you do that option. Put into the oven for 15-20 minutes, set out to cool and enjoy!
I put them into a container and will eat two every morning. I have a toaster oven which I will use to heat them up, then wrap them in foil and take to work with me as my morning snack.
